Homemade gift ready in a jiffy
If your gift list is longer than your wallet is fat, cookbook author Gloria Hander Lyons has published a collection of single-serving mixes that work as homemade gifts recipients can bank in a mug in the microwave in two minutes.
Her cookbook, “Easy Microwave Desserts in a Mug,” has more than 80 single-serving mix recipes for desserts, breakfast treats and hot beverages that are prepared, cooked and served in the same mug. Among them: pecan pie, chocolate brownie, chocolate chip cookie and peach cobbler.
The mixes use common ingredients found at the supermarket. The mugs might be there, too. Just make sure they can hold at least 12 ounces (and are microwavable). Don’t forget to attach the cooking instructions.

Mug mix recipes
Chocolate brownie mug mix
1/4 cup granulated sugar
3 tablespoons flour
2 tablespoons semi-sweet chocolate chips
1 tablespoon unsweetened cocoa powder
1 tablespoon finely chopped pecans (optional)
1/8 teaspoon baking powder
Dash of salt
1-1/2 teaspoons egg white powder
To prepare: Microwave 1-1/2 tablespoons butter or margarine in mug until melted, about 20 seconds on high power. Empty mix into mug and add 2 tablespoons water; stirring with a fork until blended. Microwave on 60 percent power for two minutes. Let stand in oven two minutes. Remove from oven and let stand until cool enough to eat.
Peach cobbler mug mix
2 tablespoons granulated sugar
2 tablespoons flour
1 tablespoon instant nonfat dry milk
1/8 teaspoon baking powder
1/8 teaspoon cinnamon
Dash of salt
Add 1 (4 oz.) snack size container of diced peaches
To prepare: Microwave 1 tablespoon butter or margarine in mug until melted. Add cobbler mix and 2 tablespoons water. Stir with a fork until well blended. Add well-drained peaches on top of batter. Do not stir. Microwave for two minutes on 70 percent power. Let stand in microwave two minutes. Remove from oven and let stand until cool enough to eat.
